It’s easier than tending a pot for 20 minutes, frees up attention to cook other things
Also idk how often you eat rice but we have it with basically every meal

Tl;dr because new skyscrapers are more narrow than old ones, and narrower skyscrapers take more time to build than wide floor plans with comparable total floor space.

Yeah, because Manhattan used to be an industrial hub. But then it got too difficult to move all of the manufactured goods across the Hudson and everyone moved their operations to New Jersey or elsewhere. There are a lot of modern manufacturing companies that were founded in NYC between 1870 and 1930.
As someone who works in manufacturing, the number of textiles factories I expected to see in the garment district was 0, not 20+ lol.

Well, I’m not sure if that’s supposed to be a lot or a little because the garment district isn’t very large.
But if you google “garment district factories” there really are a lot of them, especially for midtown.

There are still a lot of textile factories in the garment district, they’re just high up so you don’t see them

Dig a deep tunnel in stable ground. That’s what they’re doing on 2nd Ave. I don’t know if they can do it without enormous cost, though.

Can we just get rid of it? New York was fine for 200 years without it and other cities have experienced success just eliminating waterfront highways (Seattle & SF) + west side elevated highway

I’m not trying to discount your experience at all, but in my experience the general supply chain doesn’t really work the same way it used to. Things that used to be readily available off-the-shelf have a 4 to 26 week lead time now, including specialty fasteners, electronic components, mechanical components for electronics, etc..
Companies are quoting me 6-9 months for small testing equipment, PCBA’s were over a year lead time, etc..
This is more a manufacturing perspective than a construction perspective, but IMO it’s just more difficult/takes longer/more expensive to make things right now.
