Go to Ebay, find an original Tilia foodsaver that was made in Italy. You might need to replace the seal but parts are still available and they were made to last.

Solid wood unless you are getting something crazy like a CITES listed wood or old growth logs pulled from the bottom of a river, lake or swamp.
Article is more a lifestyle brand than a quality furniture maker. I'd look for a local woodworker to build what you want. Canada has some cheap hardwoods and you should sink that money into craftsmanship instead of marketing and have the best materials available.

What you are looking for are wide mouth glass jars. What is great about them other than they last for multiple lifetimes is that you can vacuum seal them too.

Find one that is old and "inefficient". We moved and ended up with a 90's era kitchen aid and it is so much better than our new fancy one. The new one from the old house is living in the garage, I really should sell it.
