Unfortunately they require a much beefier gas supply, and they all seem to come attached to a gas oven which is far from ideal. They are incredibly powerful though and I have found some countertop ones, but I am yet to figure out if they literally sit on your counter, or if they are built in like the ones you normally see. I am also concerned about their ability to maintain a low heat, as that's not typically important in most restaurant settings.

I thought so. Would you mind telling me how BlueStar manages low heat? I worry if it's like the commercial ones I've seen it'll be very good at maintaining high heat, but not so good at maintaining a low, or even mid low heat.

Beratazzoni are not highly rated by the people that use them, apparently they break easily and often and are expensive to replace and have bad customer service. If you have information to the contrary I'd love to hear it though!

Shipping to UK involves paying tax on the import paying shipping fees, finding someone who will import it and finding someone who can convert from US to UK gas plumbing. Do you know anything more specific about the import process, or about having one custom built?
